Chicken Tikka Masala: A Fusion of Flavors

Chicken Tikka Masala is a dish that perfectly encapsulates the rich, diverse culinary traditions of South Asia, while also reflecting the influence of British cuisine. It is a favorite in Indian restaurants worldwide and a staple of British Indian cuisine.



Ingredients:

. For the chicken marinade:

. 500g boneless, skinless chicken thighs, cut into bite-sized pieces

. 1 cup plain yogurt

.2 tablespoons lemon juice

. 2 teaspoons ground cumin

. 2 teaspoons ground coriander

. 2 teaspoons paprika

. 1 teaspoon ground turmeric.

. 1 teaspoon garam masala

. 1 teaspoon salt

. 4 cloves garlic, minced1-inch piece ginger, minced

.  1-inch piece ginger, minced


. For the sauce:

. 2 tablespoons vegetable oil

. 1 large onion, finely chopped

. 3 cloves garlic, minced

. 1-inch piece ginger, minced

. 2 teaspoons ground cumin

. 2 teaspoons paprika

. 1 teaspoon ground turmeric

. 1 teaspoon garam masala

. 1 teaspoon ground coriander

.1 teaspoon ground cinnamon

. 1 can (400g) crushed tomatoes

. 1 cup heavy cream

. Salt, to taste

. Fresh cilantro, chopped, for garnish


Instructions:

1) Marinate the chicken: In a large bowl, combine all the marinade ingredients. Add the chicken pieces and mix well to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.

2) Cook the chicken: Preheat your grill or oven to high heat. Thread the marinated chicken onto skewers (if grilling) or place on a baking sheet. Grill or bake until cooked through and slightly charred, about 5-7 minutes per side. Set aside.

3) Prepare the sauce: Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and cook until soft and golden. Add the garlic and ginger, cooking until fragrant. Stir in the ground spices and cook for another minute.

4) Simmer the sauce: Add the crushed tomatoes and bring to a simmer. Cook for 10-15 minutes, stirring occasionally. Stir in the heavy cream and season with salt to taste.


5) Combine: Add the cooked chicken to the sauce and simmer for an additional 10 minutes, allowing the flavors to meld.

6) Serve: Garnish with fresh cilantro and serve hot with rice or naan.
